Budget-Friendly, Easy-Peasy Winter Meals

Fall has already been giving way to colder temperatures and even a few snowfalls. If you’ve been around here, you know that I plan our meals by the season and as the weather begins to feel more wintery, I’m shifting to a new winter meal plan.

I meal plan 4 times per year, taking into account the season and our family’s needs. It’s a framework that we can shake up when we want to, but takes so much anxiety and decision-making out of the day-to-day of my life. I’m not going to lie, right now we are all tired. I need our winter meal plan to maximize ease. We’re also saving for a few house projects and a treadmill, so I’m looking for ways to save money while still prioritizing the health of our family.

Our budget-friendly, easy winter meals

Monday: Cabbage soup and homemade bread (this light soup is perfect for leftover lunches all week)

Tuesday: Quesadillas (just tortillas fried with beans and cheese inside), served with salsa and avocado

Wednesday: Rice and Stirfried veggies with chicken (alternating Indian, BBQ, or Thai chicken)

Thursday: Chili and tortilla chips (alternating pumpkin chili with other chili recipes I want to try)

Friday: a meal from my easiest meals ever list

Saturday: Sheet pan roasted sweet potatoes, sausage, and brussels sprouts

Sunday: Pizza, always pizza!

Simple as that.
