This easy cabbage soup is full of ingredients that are just plain good for you – ginger and garlic are both great for fighting off colds. Cabbage and ginger are both known to aid digestion and reduce inflammation. Cabbage and carrots are filled with vitamins and fiber. And you’ll find all sorts of claims that cabbage soup helps burn fat.
This cabbage soup is so easy to make and will be simmering away in no time. It is full of low cost ingredients and is sure to save you a few dollars on your grocery bill when you add this to your meal plan.
I LOVE making a big batch of this easy cabbage soup once a week during the winter. I’ll serve it to the family with a loaf of homemade bread for a satisfying meal, then I’ll eat the leftovers for a healthy easy lunch during the week.
If you are looking to up the protein in this healthy cabbage soup, try adding a can of white beans (drained and rinsed) or some cooked ground turkey. Or keep it super simple and do without.
I find that they tomatoes and vegetables in this cabbage soup make their own broth as they cook, so just using water instead of a premade broth really keeps the cost down in this recipe. Depending on the salt content of your tomatoes and beans (if you add the beans), you may or may not need to add salt to this soup. Try and keep it as low sodium as possible for maximum health benefits.
I go heavy on the garlic and ginger so this soup, while very simple, is full of flavor.
Simple Cabbage Soup
Ingredients
- 1/2 green cabbage, chopped into 1 inch pieces
- 3 stalks celery, diced
- 3 large carrots, peeled and diced
- 1 28 oz can crushed tomatoes
- 1 Tbs minced garlic
- 1 Tbs minced ginger
- 2 Tbs extra virgin olive oil
- 8 cups water
- salt if necessary, to taste
- 1 15 oz can white beans drained and rinsed (OPTIONAL)
- 16 oz cooked ground turkey (OPTIONAL)
Instructions
- Add the cabbage, celery, carrots, garlic, ginger, and olive oil to a large pot
- Cook on high heat for 2-3 minutes
- Add the can of crushed tomatoes and the water
- Add beans and/or cooked ground turkey, if desired
- Bring to a boil, then simmer about 1 hour
