Simple Cabbage Soup

This simple cabbage soup is wholesome, delicious, and oh-so-good-for-you!

Ingredients
  

  • 1/2 green cabbage, chopped into 1 inch pieces
  • 3 stalks celery, diced
  • 3 large carrots, peeled and diced
  • 1 28 oz can crushed tomatoes
  • 1 Tbs minced garlic
  • 1 Tbs minced ginger
  • 2 Tbs extra virgin olive oil
  • 8 cups water
  • salt if necessary, to taste
  • 1 15 oz can white beans drained and rinsed (OPTIONAL)
  • 16 oz cooked ground turkey (OPTIONAL)

Instructions
 

  • Add the cabbage, celery, carrots, garlic, ginger, and olive oil to a large pot
  • Cook on high heat for 2-3 minutes
  • Add the can of crushed tomatoes and the water
  • Add beans and/or cooked ground turkey, if desired
  • Bring to a boil, then simmer about 1 hour
