Simple Cabbage Soup
This simple cabbage soup is wholesome, delicious, and oh-so-good-for-you!

- 1/2 green cabbage, chopped into 1 inch pieces
- 3 stalks celery, diced
- 3 large carrots, peeled and diced
- 1 28 oz can crushed tomatoes
- 1 Tbs minced garlic
- 1 Tbs minced ginger
- 2 Tbs extra virgin olive oil
- 8 cups water
- salt if necessary, to taste
- 1 15 oz can white beans drained and rinsed (OPTIONAL)
- 16 oz cooked ground turkey (OPTIONAL)
Add the cabbage, celery, carrots, garlic, ginger, and olive oil to a large pot
Cook on high heat for 2-3 minutes
Add the can of crushed tomatoes and the water
Add beans and/or cooked ground turkey, if desired
Bring to a boil, then simmer about 1 hour
